a) You do not need to understand everything in this text. It's an exercise to see how much you can understand already.
b) Answer the question of Opdracht 12 on page 80. Check you answer on page 311.
'Winterkost' refers to the fairly heavy traditional winter dishes eaten in the Netherlands. Almost all of them involve potatoes, which is really a staple in the Dutch kitchen. A traditional winter dish is stamppot, a one pot meal consisting of potatoes and one or more vegetables, mashed together and usually served with smoked sausage and/or bacon and gravy. In the dialogue, Jasper suggests stamppot andijvie (some people switch the order and say andijviestamppot), which is described in the text. Other commonly used vegetables for this type of meal are kale (this is the most common way of eating kale and was popular way before the green smoothies) for boerenkoolstamppot, sauerkraut for zuurkoolstamppot and carrots and onions for hutspot. But there are many other possibilities. Sometimes the vegetables are added raw (as for andijvie), sometimes they are cooked along with the potatoes (kale, carrot/onion).
Other typical winterfare are heavy soups, like erwtensoep or snert (pea soup) or bruinebonensoep (brown bean soup).
